Summer is festive with drinks, marmalade, salad and chutneys for us. Mango and raw mango or kairi is almost everyone favourite. We can create different recipes for them like kairi chutney, marmalade or muraba, juice or other items. First of all, let start with the kairi pyaz chutney.
INGREDIENTS:
Kairi or raw mango 2 medium size
Pyaz or onion 1 large size
Tomato 1 medium size
Salt 1 teaspoon or per taste
Green chilli 1 medium size
Red chilli powder 1/2 teaspoon
Chilli flakes 1/2 teaspoon
Oil 2-3 tablespoons
DIRECTION:
1. Wash kairi, green chilli and tomato properly.
2. Cut the kairi to remove its seed with seed coat (the hard part of kairi)
3. Cut it into pieces, now take pestle and mortar to grind the kairi. Do not make the paste of kairi. After roughly grind, take the kairi into the bowl.
4. Take onion and roughly grind it also in pestle and mortar.
5. In the frying pan, add oil and hot it a little bit.
6. Now add the grinded onion to the oil and soothe them till their colour turn white.
7. Cut the green chilli and tomato into slices and add them to the soothe onion. Mix them very well.
8. Cook them for 2 minutes then add the salt, red chilli powder and chilli flakes. Mix them well.
9. Now add the roughly grind kairi or raw mango. Cook, until the oil come to the surface or water, evaporates properly.
Serve and enjoy the delicious and tasty kairi piyaz chutney.
TIPS:
1. Do not make the paste of kairi during grinding.
2. You can add less or more spices according to your taste.
3. I take it with roti at lunch time as side dish. You can also take it with white bread etc.
