How to make kulfi in home/ kulfi without condensed milk recipe

In Asian countries like Pakistan and India, Kulfi is the favourite and traditional street dessert, especially in summer. Kulfi is rich in milk, sugar, and khoya. We make kulfi without cornflour, cream, and condensed milk. We make kulfi using ingredients present in our home.


Almond kulfi

INGREDIENTS:

Milk              6 cups
Sugar             2 tablespoons or as per taste
Cardamom (Elaichi) powder      1/2 teaspoon
Ghee or Butter                    1 teaspoon
Almonds                      15-20 

DIRECTION:

ROAST ALMONDS:

1. In a frying pan, add ghee or butter.
2. Roast the almonds for 2-3 minutes.
3. Crush the roasted almonds in pestle and mortar or chopper. Do not crush too much.

MAKE KULFI BATTER:

1. In a saucepan, add milk.
2. Let the milk boil. When the milk boil, simmer the milk.
3. When the milk remains 2 cups, add sugar to it.
4. Mix the sugar well.
5. Add the crushed almonds and mix well.
6. Switch off the flame and cool it at room temperature.
7. Take molds and put the batter you prepared.
8. Freeze it for at least 5-6 hours.
9. Place the kulfi molds in the lukewarm water for some seconds to unmold easily.
                      Serve and enjoy delicious kulfi.


TIPS:

1. During simmer, stir the milk from time to time.
2. Simmer the milk at medium flame.
3. You can skip the almonds if you do not like them.
4. You can add your favourite nuts as you add almonds.
5. Do not add sugar early as it leaves the water. Milk will not thicken if you add sugar early.
